Lisa Sayers shares with us her recipe for these delicious and nutritious snacks that provide a sustained release of energy.
INGREDIENTS
100g soft apricots
100g soft prunes
100g soft dates
50g pumpkin seeds
50g sunflower seeds
100g walnuts
100g brazil nuts
50g almonds
100g of 70% cocoa solids dark chocolate
1tsp ground cinnamon [optional]
1tsp freshly grated nutmeg [optional]
¼ tsp salt [optional]
METHOD
1. Preheat the oven to 140°C and line a Swiss roll tin with not stick baking parchment.
2. Coarsely chop the dried fruit, chocolate and nuts [I use a food processor for this. I chop the dried fruit first and put it aside in a bowl and then do the same with the nuts and chocolate].
3. In a large bowl combine the chopped dried fruit, nuts, seeds, chocolate, salt and spices. I find it easier to use my hands for the mixing].
4. Place the mixture in your prepared tin and bake for 30 minutes.
5. When cooled cut into 24 bars, and bring them into the clinic.
